Aims and Scope

Chinese Brewing was founded in 1982 and is overseen by the China Association for Business. It is co-hosted by the Chinese Condiment Association and the Beijing Academy of Food Sciences. This comprehensive academic journal is publicly issued both domestically and internationally, and it is recognized as a core journal in the natural sciences within the field of brewing with broad academic influence. The journal reflects the latest research directions, achievements, and trends in the brewing industry, promoting academic exchange both domestically and internationally. Chinese Brewing mainly features columns such as: Review Articles, Research Reports, Application Technology, Analysis and Testing, and Management and Marketing.

Publication Mission

To report the latest research outcomes in the brewing field from multiple angles, at various levels, and across diverse areas, to promote the essence of brewing culture, and to construct an authoritative academic platform.

Scope of Inclusion

Chinese Brewing primarily publishes the latest research results and developments in the brewing discipline. The content encompasses various fields, including food microbiology, food biotechnology, biochemistry, biosciences, bioengineering, fermentation engineering, brewing engineering, enzyme engineering, and genetic engineering. The journal emphasizes reporting on systematic analyses of brewing mechanisms, process improvement, enzyme preparations, food additives, flavor components, screening of excellent fermentation strains, microbial metabolic regulation and quality enhancement, clean production and comprehensive utilization of by-products, food safety laws and standards, quality assurance systems and standardization, as well as the upgrading of intelligent, digital technologies and equipment.
